It is Christmas Eve and the month has flown by. It has been a fall that I have cherished. Amongst the busyness of life I try to fit in time for others who are facing trials in their life and do my best to teach my girls to as well. These last few months seemed to be a bit overwhelming in the numbers of families who were facing obstacles. Cancer, illness, parents oversees fighting for the freedom of others, and various other adversities …..we do what we can and give thanks for good health.
Having now reached the big day of Christmas Eve and doing the last little bits we get down to a Horton Family Tradition – Egg Nog.
soooo YUMMY is the only way that it can be described.
Horton Christmas Eggnog
6 eggs separated
1/4 tsp salt
2/3 cup fruit powdered sugar
2 1/2 cups light cream
1 cup milk
1 cup rum/brandy (Dave does this taste test and our eggnog always has at least 3 cups of dark rum in it 🙂
1 1/4 cup whipping cream
freshly grated nutmeg
In large bowl beat together egg whites and salt until frothy. Gradually beat in half the sugar. Beating until stiff peaks form. In punch bowl beat egg yolks until light in colour, gradually add remaining sugar and beat until thickened and lemon coloured whisking constantly. Gradually add light cream and rum and milk. In chilled bowl whip whipping cream until soft peaks form. Fold whipped cream then beaten egg whites into yolk mixture. Chill. Sprinkle with nutmeg.
Makes 12 servings.
