These shall forever after be known as my Guilt Cookies. After I snapped at the kids this morning (and yes I had my legitimate reasons!!!) I felt bad-mommy syndrome setting in. Yesterday I had found a recipe booklet from a school Parent’s Council meeting of healthy Bake sale acceptable recipes. ( Entitled Bake it Up! It has some fabulous recipes in it – definitely worth checking out.)
I thought I would curb my mommy guilt feelings with a cookie making session with the girls. 🙂 You know the theory – give them 30 minutes undivided attention and maybe they will leave me alone for the rest of the day……. (Yep I am still a little testy: blame it on my orthodontic adjustment this week or the swelling calendar of photo bookings 🙂 , or the new puppy — newly nicknamed Madame Poopalicious, the list goes on and they are all great things – just the juggling is getting a little more complex 😉

Best-Ever Chocolate Cookies
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 tsp baking soda
1/4 tsp salt
2 large eggs
1/2 cup soft, non hydrogenated margarine
3/4 cup packed brown sugar
1 1/2 cups quick-cooking rolled oats
1 cup bran cereal (not flakes)
3/4 cup white chocolate chips
1. Preheat oven to 350 degrees F. Use ungreased baking sheets or line baking sheets with parchment paper.
2. In a small bowl, sift flour, cocoa powder, baking soda and salt.
3. In a large bowl, beat eggs, margarine and brown sugar. Fold in flour mixture. Stir in oats, bran cereal and chocolate chips.
4. Drop dough by heaping tablespoonfuls about 2 inches apart onto baking sheets.
5. Bake for 7-9 minutes or until just crisp. Let cool on baking sheets on a wire rack for 5 minutes, then remove to rack to cool completely.
