Yesterday I received an amazing gift from a client. A delightful gift bag containing a bottle of wine 🙂 and some incredible fresh from the oven still steaming brownies. They were delicious and passed the kid taste test with flying colours. I didn’t tell them they were gluten free and full of protein. 😉 She included the recipe and I had to share – it is definitely going into my rotation of recipes. 🙂
Black Bean Brownies (yields 16 servings)
1 can (15 ounces) black beans, rinsed and drained
3 eggs
3 tablespoons canola oil
1/2 cup unsweented cocoa powder
1/2 teaspoon baking powder
1 teaspoon vanilla extract
2/3 cup brown sugar, packed
1/2 cup semi-sweet chocolate chips, divided
1. Preheat oven to 350 degrees.
2. Put black beans in a food processor and process until smooth.
3. Add eggs, oil, cocoa, baking powder, vanilla and brown sugar and process until blended.
4. Add 1/4 cup chocolate chips and pulse 5 times.
5. Pour mixture into greased 8 inch square baking dish. Sprinkle top with remaining chips.
6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack before serving.
