I test drove a new recipe on the weekend and the kids actually like them. At least the 3 dozen have dwindled down to 7 lonely cookies over the course of 5 days so I am going to presume they were acceptable to my midnight munchers 😉 I found the recipe in an old recipe book/pamphlet that came home from the school years ago called Bake it up! I have had it for at least 8 years so not sure if it is still in print but it has some great recipes in it if you can find it.
Carrot Cookies
1 cup whole wheat flour
3/4 cup quick-cooking rolled oats
1/2 cup ground flax seed
1 tsp ground cinnamon
1/2 tsp baking soda
1 large egg
3/4 cup light packed brown sugar
1/2 cup soft non-hydrogenated margarine
1 tsp vanilla
1 cup grated carrots
1. Preheat over to 350 F. Lightly spray baking sheets with non-stick cooking spray
2. In a medium bowl combine flour, oats, flax seed, cinnamon and baking soda
3. In a large bowl beat egg, brown sugar, margarine and vanilla until smooth. Fold in flour mixture, Stir in carrots.
4. Drop dough by the heaping tablespoonfuls, about 2 inches apart onto prepared baking sheets.
5. Bake for 10-15 minutes or until lightly browned. Let cool on baking sheet on a wire rack for 5 minutes.
The family loved them … they felt that they tasted like carrot muffins. The one suggestion was that “butterscotch chips would make these perfect” and I agree. I will toss in a handful of butterscotch chips next time. 🙂
