Due to an ongoing battle between myself and my oven – Christmas Baking has taken a serious back seat in my life compared to what it used to. I would make all kinds of different cookies and squares all the while chasing after toddlers and building toilet paper roll santas. But since we moved into our new house there has been an uneasy relationship between the oven and myself. The oven is dying a slow and painful death. But, frugal as I am, I will not replace it until absolutely necessary and have simply learned to bake with the fire extinguisher handy 😉
The girls poured through my recipe books to find a couple of favourites they wanted to bake this weekend. They created a few that managed to survive 🙂 They look like they were made by squabbling kids fighting over how squished was too squished for a cookie but they taste great all the same.

Jell-O Pastel Cookies
1 3/4 cups flour
1/2 tsp. baking powder
3/4 cup butter, softened
1/2 cup sugar
2 pkg (85 g each) Jell-O (i used strawberry and lime – red and green 😉
1 egg
1 tsp vanilla
Preheat oven to 400 F. Mix flour and baking powder; set aside. Beat butter in large bowl with electric mixer on medium speed until creamy. Gradually add sugar and 1 pkg of the dry jelly powder, beating until light and fluffy. Add egg and vanilla; mix well. Gradually add flour mixture, beating until well blended after eaach addition.
Shape dough into 1 inch balls. Place cookies 2 inches apart on the ungreased baking sheets. Flatten with bottom of clean glass (my kids used their fingers and a fork).
Lightly sprinkle with remaining pkg of jelly powder.
Bake 8-10 minutes or until edges are lightly browned. Remove from baking sheets to wire racks. Cool completely.
Makes about 3 dozen cookies.
The gingerbread house was completed earlier in the week. The rule is hands off the gingerbread house until Christmas Eve ……. I found some items suspiciously missing. 😉
