I promised in my previous post to include one of the Glassford Family treasured chocolate cake. Known as a Wacky cake because of it’s ingredients ….. we have been making it for years.
Glassford Wacky Cake
3 cups all purpose flour
1 cup white sugar
1/2 cup nestles quik (substitute cocoa for a darker chocolate cake, hot chocolate powder for a lighter looking cake)
2 teaspoons baking soda
1 teaspoon salt
1/2 cup corn oil
2 tablespoons white vinegar
2 teaspoons vanilla
2 cups cold water
Place 1st five ingredients (flour, sugar, quik, baking soda, and salt). Mix well. I prefer to sift the dry ingredients to ensure that the baking soda is well blended. Make 3 holes in the mixture. Pour vanilla in one, oil in the second and vinegar in the third. Pour water overall. Mix well.
Pour into a 9 x 13 pan or 2 round pans and bake at 325 for 35-40 minutes.
When cooked, decorate as you prefer. We love a whipping cream based icing.
Icing:
2 cups whipping cream
1/2 cup sugar
1/4 cup cocoa
Combine all ingredients together and whip until stiff. Spread mixture between layers and on top of cake. To top it off (because by this time the calorie counting is way done 😉 I crumble a skor bar.

Thanks for sharing this family gem Patty, I love that it has no eggs because sometimes you want to make a cake and voila; only one egg left, or none. Look forward to making this with my girls! Your pictures are great!
