Cookies are a go to favourite for desserts and gifts in our household. And when we do have our go to favourites for different holidays and events. My youngest opted to not come home for Easter this year as it falls right smack at the start of final exams. I plan on visiting Saturday to take her out to lunch and bring her a little plate of cookies to share with her fellow university cramming for finals students. But I thought I would share a couple of the recipes with you. 🙂
The first is a delicious chocolate chip cookie. Crunchy on the outside – soft on the inside. In the summer it is perfect for making ice cream sandwiches. I am not sure when the original recipe came from but we have played with it a little over the years to make it one of our favourites.
Chocolate Chip Cookies:
- 1/2 cup butter
- 1 cup brown sugar
- 1/2 cup white sugar
- 1 egg
- 2 teaspoon vanilla
- 2 1/2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup crushed mini eggs (at Easter) or chocolate chips.
- Cream together the first 5 ingredients.
- Add Dry ingredients.
- The mix is a little dry and crumbly. I add 2 tablespoons of water to make the batter a little less crumby.
- Form cookie shapes bake on a pan at 350 F. approximately 10 minutes.
Chocolate Fudgey Brownie Cookies

- 1/2 cup cocoa powder
- 1 cup white sugar
- 1/2 cup melted butter
- 3 tablespoons vegetable oil
- 1 egg
- 2 teaspoons vanilla extract
- 1 1/3 cups all purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 /2 cup Hershey’s Cookies and creme eggs (crushed) (or your choice of chocolate chips) I like the contrast of the white and dark chocolate.
- In a bowl mix the cocoa, white sugar, butter and oil. Beat in the egg and vanilla.
- Combine the flour, baking powder and salt. Then add to the wet ingredients.Fold in the eggs/chocolate chips.
- Place on a parchment lined baking sheet.
- Bake at 350 F for 10-12 minutes.
