This recipe has been making the rounds on facebook lately and I decided to give it a whirl. It was an overwhelming success with 2 thumbs up from my family and the cookie jar quickly being emptied. I did find them to be a bit crumbly …. not sure if i needed to add more chocolate chips to the mix or choose a different type of peanut butter but crumbly or not they were delicious and have made it into the official Horton recipe book. 🙂
Chick Pea Chocolate Chip Peanut Butter Cookies
1 1 /4 cups canned chickpeas, rinsed and patted dry
2 teaspoons vanilla extract
1/2 cup plus 2 tablespoons peanut butter
1/4 cup honey
1 teaspoon baking powder
a pinch of salt
1/2 cup chocolate chips
1. Preheat over to 350F. Combine all of the ingredients, except for the chocolate chips, in a food processor and process until very smooth. Make sure to scrape the sides and the top to get all of the chunks.
2. Add in chocolate chips and stir or pulse the food processor once or twice.
3. Form into 1 1/2″ balls and place on a piece of parchment paper. I squished them down a little to flatten. They do not rise a whole lot. Bake for 10 minutes.
