One of the staples from my childhood is jello. I long running celiac genetic history made Jello the go to dessert of choice and never was there a family gathering without the jiggling jello gracing the table. We are particular about our jellos. Vegetables are not allowed to be mixed with the jello. You will never find a jello laden with carrots, celery or another else that might come out of the vegetable crisper. 🙂
This is a family Favourite!!! 3 tier Jelly Salad.
Make them in reverse if you have one of those flip out jello molds. I personally find them an exercise in frustration and NEVER manage to get the top to come out looking correct when I flip it. Instead I make this particular one in a crystal footed bowl I was given many years ago.
Glassford 3-Tier Jelly Salad
Bottom Layer:
1 lime jelly dissolved in 1 cup boiling water. Add juice from 1 – 10oz tin crushed pineapple plus enough cold water to make 3/4 cup. Chill until slightly thickened then fold in 10 oz crushed pineapple. Let set.
Middle Layer:
1 lemon jelly dissolved in 1 cup boiling water add 1/4 cup cold water. Chill until partly set. Mix 1 package dream whip, add 1/2 cup cold milk and whip. Add 1/4 lb softened cream cheese. Best until smooth. Mix with lemon jelly and add to firm Bottom layer.
Top Layer:
1 large cherry jelly dissolved in 1 1/2 cups boiling water, add 2 cups cold water chill until firm.
Enjoy 🙂
Again – reality check as there always is when I am cooking…….
If you look closely at my photo you will see the green and red are reversed. When I first made my shopping list 2 days before making the jello all of the ingredients were in my cupboard. However, since the girls have learned and been cleared to make jello it is the snack of choice. The green jello was missing from my cabinet when I began frantically preparing food for a gathering. With no time to run back to the store, I used the red jello instead. Cursing the independence of my children as they showed me the 3/4 eaten bowl of jello from the days previous after school jello making endeavour. 😉 I guess the next task is to get them to fill in the grocery memo board on the fridge. Enjoy!!
