I am always on the lookout for things that are simple, healthy and fit into our crazy schedule. I stumbled upon this one a couple of months ago and it quickly became a household favourite. I have been making large batches of them to put in the freezer. The girls LOVE them. I took the original recipe and have tweaked it a bit to reduce the calories. I will post both of the recipes for you – your choice which you prefer 🙂 The original Recipe ingredients are written in blue.
Salmon Patties (Horton Version) (Original Version – “Kraft” Recipe quantities)
2 cans (14.7oz.) Salmon, drained, skin and bones discarded (ick I HATE this part) 1 Can (14.7oz.) Salmon
1 pkg. (6oz.) Stove Top stuffing mix for chicken 1 pkg. Stuffing Mix
1/2 cup grated low fat mozzarella cheese 1 cup Mozzarella Cheese
3/4 cup water
2 green onions chopped fine 2 green onions
2 tbsp. mayonnaise 1/3 cup mayonnaise
2 tbsp lemon juice 1 tbsp lemon juice
Premake stuffing then mix all ingredients together. Shape into 12 patties. Refrigerate about 20 minutes. They can get crumbly when cooking especially because I reduced the glue 😉 from the original recipe (mayo and cheese). Refrigerating and/or freezing helps them to stick together. Heat large nonstick skillet on medium heat. Add patties to skillet in batches. Cook 6 min. or until golden brown on both sides, turning carefully after 3 minutes.
